4 days work week - Monday, Tuesday, Friday & Saturday (day shifts)
The Sous Chef in a kitchen is the main support for the Head Chef. He / She act as the liaison between the Chef and the rest of the staff. The Sous Chef is responsible for planning and directing food preparation in a kitchen. This will involve a large degree of supervising other kitchen staff. As assistant to the Head Chef, the Sous Chef will help with meal preparation, menu planning, inventory, cost control and managing of supplies. Also aid in making sure the kitchen is up to safety standards and that staff are obeying sanitation rules.
The specific duties/ responsibilities in our organization include:
1. Prepares food to specifications / recipes.
2. Properly measures and portions all food items. Complies with all portion sizes, quality standards, policies and procedures.
3. Cooks all food to proper specifications in a timely manner.
6. Ensures proper food temperatures are maintained and food is stored correctly.
7. Ensures freshness and quality of all menu items.
8. Packages all meals to proper specifications.
9. Performs opening and closing work duties as instructed and according to proper guidelines.
10. Supervise and inspect all preparation and cooking equipment on a regular basis to ensure that they are kept clean, sanitary, and in perfect operating order.
11. Follows and upholds all health codes and sanitation regulations.
12. Uses waste control guidelines
13. Performs any other duties assigned.
14. Bi-weekly review of timecard hours of all hourly staff
15. Assisting in receiving orders; cross checking products delivered to what is on the invoices.
16. Relay any discrepancies or additions on invoices to the Operations Manager
17. Assisting Head Chef in maintaining a clean, organized kitchen, with regular delegation of cleaning and organization of dry storage, fridge(s) and freezer.
18. Trains new employees.
19. Solves problems that arise and seizes control of issues in the kitchen
20. Assume the role as Head Chef, in his or her absence
21. Prepare and pack shipping boxes
22. Check Inventory of vegetables, meat, dry goods etc. and coordinate with the Head Chef regarding weekly order requirements.
